Great Hamburger Recipes

 

 

Bacon & Beef Burgers

1 ½ lb. hamburger

1 egg

¾ t. salt

¾ c. grated cheese

2 T. Worcestershire sauce

½ t. pepper

3 T. catsup

¼ c. onion

8 – 10 slices bacon

 

Mix together all ingredients (except bacon).  Shape into patties, wrap bacon slice around each patty and secure with toothpick.  Grill or broil.  When I grill these, I put aluminum foil underneath because they are messy (but oh, so good)!!!

 

 

 

 

Baked Spaghetti Recipe

Prep Time: 30 minutes
Cook Time: 1 hour 55 minutes
Yield: 10 servings

2 cups canned diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup diced onion
1/2 cup diced green bell pepper
2 cloves garlic, chopped
1/4 cup chopped fresh parsley leaves
1 1/2 teaspoons Italian seasoning
1 1/2 teaspoons House Seasoning, recipe follows
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 small bay leaves
1 1/2 pounds ground beef
8 ounces uncooked angel hair pasta
1 cup grated cheddar
1 cup grated Monterey Jack

Preheat the oven to 350 degrees F.
In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar, and bay leaves. Bring to a boil over high heat, and then reduce the heat and let simmer, covered, for 1 hour. Crumble the ground beef in a large skillet. Cook over medium-high heat until fully cooked, with no pink color remaining. Drain the fat from the meat, and then add the ground beef to the stockpot. Simmer for 20 more minutes. Cook the pasta according to the package directions. Cover the bottom of a 13 by 9 by 2-inch pan with sauce. Add a layer of pasta and then a little less than 1/2 of each cheese; repeat the layers, ending with the sauce. Bake in the oven for 30 minutes. Top the casserole with the remaining cheese, return it to the oven, and continue to cook until the cheese is melted and bubbly, about 5 more minutes. Cut into squares before serving.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups
Preparation tine: 15 minutes
Cooking time: 20 minutes
Ease of Preparation: Easy

 

 

 

Bean and Corn Hotdish

1 lb hamburger
Chopped onion - as much as you would like
1 big can of Bush's Baked Beans - original (don't drain)
1 can whole kernel corn
3 cups elbow macaroni
1 cup Western Dressing to taste
1/2 cup ketchup to taste

Brown hamburger and onion together. Cook macaroni; drain. Mix hamburger, macaroni, corn, baked beans. Add Western dressing and ketchup, until desired taste.

 

 

 

Bush Baked Beans

2 cans Bush Beans with onion
1 pound bacon-fried and drained
1 pound ground beef -browned and drained
Brown onion with ground beef
Add beans, bacon, ground beef and onion together and add
1 cup ketchup
1/2 cup brown sugar
mustard if desired
Salt & Pepper

 

Great for the crocked pot and taste better when reheated


 

 

Cheeseburger Soup

½ lb ground beef

½ c chopped onion

¾ c shredded carrots

¾ c diced celery

1tsp dried basil

1tsp parsley flakes

4 Tlb butter

3 c chicken broth

4 c diced, peeled potatoes (about 4 medium)

¼ c all purpose flour

8oz American cheese, cubed (2 cups) I use Velveeta

1½ c milk

¾ teas salt

½ teas pepper

Cajun seasoning to taste

 

·        Brown beef, drain, and set aside.  Sauté onion, carrots, celery, basil, and parsley in skillet with 1 Tbl butter – about 10 minutes. 

·        Add broth, potatoes, and beef.  Bring to a boil.  Reduce heat, over and simmer 10-12 minutes or until potatoes are tender. 

·        Meanwhile, in a small skillet, melt remaining butter, add flower, cook and stir for 3-5 minutes or until bubbly.  Add to soup; bring to a boil.  Cook and stir for 2 minutes.  Reduce heat to low.  Add cheese, milk, salt, and pepper, and cook and stir until cheese melts.  Remove from heat.

 

 

Cheese Dip - fast & easy

1 block of Velveeta Cheese

1 can RO*TEL diced tomatoes and green chilies (drained) we use extra hot but either work

1 can Hormel Chili with NO beans

 

Mix together and microwave until cheese in melted.  Serve with chips.

 

 

 

Chinese Hot Dish

1 lb hamburger

1 medium onion

Brown together and drain.

 

Add

5 medium sliced mushrooms or 1 small can

1 can Tomato soup

1 can Cream of Celery or Mushroom

1 can Veg-All vegetables

2 cups of bagged Chinese noodles

Mix everything together (add cheese to the mixture if desired)

 

Pour in a small greased roasting pan

 

Spread 1 cup Chinese noodles over the top

 

bake on 350 for 45 minutes

 

 

 
Cottage Meatloaf

1 ½ lbs lean ground beef
½ cup tomato ketchup
1/3 cup tomato juice
½ tsp each salt & black pepper
1/8 tsp red pepper
2 eggs, beaten
¾ fresh bread crumbs
¼ cup finely chopped onions
Cheese (Colby, Colby Jack or Cheddar)

Topping: ¼ cup tomato ketchup, ½ tsp prepared mustard, 2 tsp brown sugar.

Preparation: In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended.

Add ground beef. Mix gently but thoroughly.
 

Line a 9x5 inch loaf pan with foil. Press in beef mixture. ½ beef mixture, then slices of cheese, then ½ meat mixture.
 

In separate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf.
 

Bake at 400 degrees for 25 – 45 minutes or until done

Drain off fat. Rest meatloaf about 5 minutes before serving.

Garnish with fresh herbs if desired.

 

 

Creamy Corn & Beef Casserole

1 pound hamburger

1 small onion chopped

1 – 10 ¾ oz can tomato soup – with 1 ½ c water

2 cups raw elbow macaroni (8 oz)

½ tsp salt

¼ tsp pepper

1 – 16 oz can creamed corn

½ c shredded cheddar cheese

 

Cook meat and onion over medium heat about 5 minutes.  Drain.

 

Stir in tomato soup with 1 ½ c water, macaroni, salt, and pepper.  Bring to a boil.  Stir often.  Reduce heat to low.   Partially cover and simmer until macaroni is barely tender (6-8 minutes).  Stir in creamed corn.  Pour into a lightly buttered ½ qt casserole dish and cover tightly.  Bake 15 minutes.  Remove cover and sprinkle cheddar cheese over top.  Bake uncovered about 15 minutes.  Casserole should be bubbling and cheese melted.

 

 

Enchiladas

2 pounds hamburger

cheddar cheese

½ c chopped onions

1 can cream of mushroom soup

1 can tomato soup

1 can hot or mild enchilada sauce

10-12 tortilla shells (small)

 

Combine cooked beef, ½ c cheese and onions.  Set aside.

 

Combine soups and sauce.  Top each shell with meat mixture and roll up.  Place seam side down in greased 9 x 13 pan.  Pour sauce over shells and top with cheddar cheese (I just guess on how much).

 

Bake 350 degrees for 25-30 minutes

 

 

Enchilada Casserole

2 lbs. ground beef
1 lg. onion, chopped
2 cloves garlic, chopped
1 pkg. taco seasoning mix
1 pkg. enchilada seasoning mix
1 (12 oz.) can tomato paste
1 (10 1/2 oz.) can cream of mushroom soup
2-3 jalapeno peppers (less to taste), chopped
4-5 c. water
1 lb. sharp cheddar cheese, grated, or substitute 1/2 American and 1/2 Velveeta cheese
15 corn or flour tortillas

Preheat oven to 350 degrees. In a large skillet, brown beef and drain. Add onions and garlic, mixing thoroughly. Stir in taco and enchilada seasonings. Add tomato paste, soup, and jalapenos. Add water slowly. Cover and simmer about 45 minutes.

In a greased 9x13 inch baking dish, layer meat sauce, tortillas and grated cheese. Sprinkle grated cheese on top of casserole. Bake, covered, for 45 minutes. Uncover and bake an additional 12 minutes. Yield: 8 servings.

 

 

Enchilada Casserole - very easy

2 lbs. ground beef
1 lg. onion, chopped
1 (10 1/2 oz.) can cream of chicken soup
1 (10 1/2 oz.) can cream of mushroom soup
1 (10 1/2 oz.) can enchilada sauce
1/2 lb. Velveeta cheese, cubed
15 corn or flour tortillas, quartered

Preheat oven to 350 degrees. In a skillet, brown meat and onion. Add soups and enchilada sauce. In a greased baking dish, layer meat, tortillas and cheese. Repeat layers until all used. Bake 30 minutes.
 

 

French Loaf

1 French loaf

2 lbs of hamburger

1 large onion

1 can cream of mushroom soap

Lowry's seasoning salt    -    to taste

Garlic power                     -    to taste

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

 

brown hamburger and onion - drain

 

mix everything together over low heat until cheese is melted

 

cut top in French loaf then scoop out excess bread

 

pour mixed ingredients in the bread, put the bread top back on, wrap with tin foil, bake at 350 for 1/2 hour.

 

let sit for 10 minutes and cut into 1 1/2" to 2" slices

 

goes great with a tossed salad.

 

 

 

Goulash

1-2#'s ground round

Elbow macaroni

Diced celery (I like a lot of celery) 
1 med. onion

Chili Powder just enough to give it a little zing.

Salt and lots of Pepper

2 or 3 cans of diced tomatoes depending on the number you are cooking for.

Tomato Juice.

 

Brown the ground beef. 

 

Cook enough macaroni for number of desired servings.

 

Combine the tomatoes, celery, onion, ground beef and spices in a large stock pot and cook until the celery is done. 

 

Add the cooked noodles and enough tomato juice to make the desired consistency.  I like mine more runny like a soup rather than thicker.    

 

Heat thoroughly and serve with fresh bread and peanut butter.

 

Even tastes better as leftovers the next day or 2.

 

 

Fast Goulash

I have a fast goulash that our family likes.

 

Brown ground beef and onions.

Boil macaroni/drain.

Add 1 can of Campbell's Chili Beef soup to hamburger and add some water.

Add macaroni, salt and pepper.

Easy and tasty.

 

 

Super Easy Goulash:

Ingredients:

- 1 1/2 pounds hamburger with onions to taste

- 3 boxes of Kraft Mac and Cheese

- 1 jar of Ragu spaghetti sauce

- 1/4 - 1/2 cup brown sugar

 

1. Brown hamburger and onions.

2. Make Mac and Cheese according to directions on box.

3. Drain grease from hamburger.

4. Add hamburger to Mac and Cheese.

5. Add spaghetti sauce.

6. Stir in brown sugar.

7. Sprinkle on salt and pepper to taste

 

 

 

Hamburger Casserole

1 pound hamburger

½ onion

1 potato per person

1 box stove top stuffing mix

1 can “cream of something” soup

½ can milk

 

Make stuffing mix according to directions on package. 

Place in greased casserole dish.

Brown hamburger and onions together.

Spread hamburger on stuffing layer.

 

Peel potatoes and slice.  Spread potatoes on hamburger layer. 

 

Mix soup with ½ can of milk and pour of potato layer. 

Bake until potatoes are soft.  About 1 hour. 

 

 

Hot Hamburger Dip

1 lb. hamburger

1 can of chili, no beans

1 small jar Cheez Whiz

 

Serve with corn chips or tortilla chips.  This makes a meal just like when you go to ballgames and buy super nachos!  It’s quick.

 

 

Lasagna

2 pounds hamburger

1 jar spaghetti sauce

1 can mushrooms

cooked noodles (I usually make 8)

Cottage Cheese

Swiss Cheese slices

Mozzarella Cheese

Parmesan Cheese

 

I brown the meat seasoned with salt and pepper.  I also add onions if I have any.  After the meat is browned, I add one can drained mushrooms and the spaghetti sauce.  I usually have this cook on the stove for a few minutes.

 

I then layer the following twice in a pan:

 

Noodles

Meat

Cottage Cheese

Swiss Cheese

Mozzarella Cheese

Parmesan Cheese

 

I bake the lasagna at 350 degrees for about an hour.

 

 

 Meatballs

1 pounds hamburger

1 pound sausage

salt & pepper

Lawry seasoned salt

onion

1 egg

dash of nutmeg

dash of cinnamon

½ c oatmeal

milk – just a splash

mushrooms – I chop them

 

Combine all ingredients.  Fry in butter – about 20 minutes at 350 degrees.  I usually make brown gravy after frying the meatballs.

 

 

Mexican Hotdish

1 pound hamburger

½ onion – or more

1 cup rice

1 packet taco seasoning

1 16 oz can of tomato sauce

Tortilla chips  (or Doritos)

¾ c shredded cheddar

 

Brown 1 pound of hamburger with ½ onion

 

Cook 1 cup rice as directed on package (I use minute rice)

 

Add one packet taco seasoning to water for rice

 

Combine cooked seasoned rice, hamburger and tomato sauce.

 

Bake at 350 until heated through.

 

Crumble tortilla chips or Doritos on top of casserole.  Sprinkle with ¾ cup cheddar cheese.  Bake until cheese is melted.

 

Serve with salsa and sour cream. 

 

This works great to make ahead and then just heat up.

Also tastes great reheated.

 

 

Pizza Burgers

1 pound hamburger

1 jar pizza sauce

other pizza toppings

mozzarella or other pizza cheese

 

Brown hamburger – can add onion.  After browned, add pizza sauce.  Cook for a few minutes.  Place bun halves on baking sheet.  Put hamburger mixture on buns.  Add other toppings as desired.  Top with cheese.  Bake 400 degrees until golden brown (about 15 minutes).

 

 

Pizza Casserole

Brown 2 pounds hamburger in microwave.

 

Add pepperoni (cut up)

1 bag noodles
1 jar pizza sauce
2 cups water.

 

Cook 15 minutes or until noodles are done.  Stir occasionally.

 

Add mozzarella cheese and cook 2 minutes.

 

 

 

 

Pizza Hotdish

1 lb hamburger – browned, sprinkle with onion and garlic salt

1 jar Ragu pizza sauce (10 ½ oz)

1 can tomato sauce (8 oz)

½ c water

½ teas salt

½ teas pepper

1 teas oregano

·        Simmer above 20 minutes.

Add 1½ c American cheese (Velveeta works)

 

Cook 8 oz package wide egg noodles.  Place ½ sauce mixture in 9x13 buttered pan.  Put noodles on top and place remaining sauce on top.  Top with mozzarella cheese.  Sprinkle with parmesan cheese.  Bake at 350 30-40 minutes.

 

 

Ramen Beef Dish

2 pkgs. Ramen Pride Beef Soup

1 lb. hamburger

1 can condensed tomato soup

1 small onion diced

mustard to taste

worsteschire sauce to taste

 

Brown the hamburger & onion – drain.  While hamburger cooking, cook the Ramen Pride soup as directed – drain.  Combine soup, with hamburger add tomato soup, mustard and worsteschire to taste.  Makes a great fast meal.  I add mushrooms or green peppers to mine too for some more vegetables.  I serve with a salad and French bread. 

 

 

 Skillet Lasagna

10 lasagna noodles (app 8 oz)

1 lb ground beef

1 small onion minced

1 14-15 ½ oz jar spaghetti sauce

1 15 oz ricotta cheese

1 egg

¼ teas salt

¼ teas pepper

1 4oz package mozzarella cheese

 

Prepare noodles as directed.  Drain and cook ground beef and onion until done.  Stir in 2/3 spaghetti sauce; cook until heated through.  Spoon ½ of the meat mixture into baking dish, set aside.  Keep remaining meat simmering.

 

In bowl, combine ricotta cheese, egg, salt and pepper.  Spoon ½ of ricotta mixture evenly on meat mixture in baking dish, top with half of noodles, sprinkle with half of mozzarella cheese.  Repeat layering with remaining meat mixture, ricotta mixture, lasagna, then remaining sauce and mozzarella cheese.  Cover.  Bake at 325 for 15 – 20 minutes or until cheese is melted.  Sprinkle with parmesan if desired.

 

 

Swedish Meatball Hotdish

Brown ground beef/onions

add the seasoning from a pkg. of SWEDISH MEATBALL package.

Boil noodles / drain

add the other part of the pkg. for the noodles and add milk. It states on the pkg. how much milk to add.

Mix and warm this. 

Put hamburger mixture on plate and add the noodles on top.

I just don't take the time to make the meatballs but enjoy the flavoring of the mix.

 

 

Taco Ring

1 1/2 lbs hamburger
1 package taco seasoning
2 packages crescent rolls

Taco toppings: lettuce, tomatoes, black olives, sour cream, etc.

Brown hamburger and drain. Add taco seasoning and fix as you would for tacos. Unroll and separate crescent rolls. On a round (Pampered Chef!!) stone lay out so that tip is to the outside. Take browned taco meat and put a scoopful (Pampered Chef medium scoop!!) on each crescent roll. Take end tip and fold over taco meat so that a ring is formed. Bake for 20 minutes at 350. Use the open middle to put your taco toppings. I sometimes warm up a can of refried beans in the microwave and put that in the middle first and then add the other toppings.
 

 

 

Tater Tot Hotdish

1 lb hamburger

1 medium onion

Brown both together and drain

Add

1 can cream of mushroom soup

1 can tomato soup

1 can Veg-All mixed vegetables (cheap brand is real salty)

1 can mushrooms

 

Grease a standard cake pan

Pour mixture in cake pan

 

Cover with tater tots and bake at 400 for about 30 minutes or until tator tots are crisp.

 

 

Three Soup Hotdish

1 lb hamburger

1 medium onion

Brown together and drain.

 

Add on can of each

Tomato soup

Cream of celery soup

Cream of mushroom soup

 

Boil between 2 to 3 cups of elbow macaroni – drain

 

Mix everything together and serve
